New Year New YOU! Recipe for Seafood Filo Parcels

See below for a delicious, high-protein, low-carb and Dietitian approved dinner option - perfect to keep you in line with that New Year's Resolution!


Seafood Filo Parcels (4 serves)

Prep 10 mins, Cooking 20-25 mins


650g seafood marinara mix

1/2 cup cous cous, prepared according to packet instructions

1/2 cup frozen peas

1 zucchini, grated

12 sheets filo pastry, thawed

Olive oil spray

Salt & pepper

Green salad to serve


Preheat oven to 220 degrees. Line a tray with baking paper. Combine marinara mix, cous cous, peas, zucchini, as well as some salt and pepper in a bowl.

Spray and layer 3 sheets of filo on top of each other. Repeat to make 4 stacks in total. Fold each stack in half, from the short side.

Divide marinara mixture evenly in the centre of the filo stacks. Fold long sides of filo over the filling, overlap with the other sides and tuck underneath. Transfer to tray and spray tops with oil, plus eason with salt & pepper.

Bake for 20-25 minutes or until golden. Enjoy with a green salad!
