Decadent Chickpea Brownie

This delicious Chocolate Chickpea Brownie tastes amazing and will definitely impress your dinner guests!

We have exchanged the plain flour for chickpeas, white sugar for brown and the butter for grapeseed oil, creating a larger proportion of protein and significantly reducing the saturated fat content.

These adjustment definitely makes our 360Health Brownie healthier than the norm, but please still see this as a treat that should be eaten on occasion only (if your aim is weight loss or maintenance).



1 can chickpeas, rinsed & drained

4 large eggs

3/4 cup brown sugar

1/3 cup grapeseed oil

1/2 tsp baking powder

1 1/2 cups dark chocolate chips or buttons

1 tsp vanilla

1 shot espresso

1/2 tsp salt

Handful of pistachios


Preheat oven to 175 degrees, Cover a 23 cm diameter baking tin with baking paper. Melt chocolate in microwave until smooth, 10 seconds at a time, stirring vigorously every time until melted.

Combine beans and eggs in a food processor and blend until smooth. Add remaining ingredients to food processor and combine thoroughly.

Pour the batter into baking tin and add the pistachios to the top if desired, pushing a few of them into the batter.

Bake for 30 minutes or until a knife inserted into the centre of the dish comes out clean. Cool in pan and serve with a few raspberries and a sprig of mint.
